Dish: Mulligatawny Vegetable Soup

Description:
Traditional smooth Indian soup with coconut milk, lentils, potato and spices.
Ingredients:
- 1x large onion, chopped
- Half raw green apple, sliced
- Half medium sized potato, sliced
- 1 cup coconut milk
- ¼ cup red lentils
- ½ tsp. turmeric powder
- 1 tbsp. vegetable oil
- 2 garlic cloves, chopped
- Salt, to taste
- 1 tsp. cumin powder
- ½ tsp. coriander powder
Instructions:
- Heat oil in a non-stick saucepan and fry onions for around 10 minutes, until brown in colour.
- Add garlic and sauté for 1 minute. Then add sliced apple, salt, sliced potato and red lentils. Mix well.
- Add turmeric powder, cumin powder, coriander powder, coconut milk and 2 cups of water.
- Bring to the boil, then reduce the heat to a low simmer.
- Cover and simmer for 30 minutes until all the ingredients are mashed.
- Remove the cover and puree in a blender until smooth.
- Serve hot
Garnish:
- 1 tbsp cooked rice at the centre of the bowl and a lime wedge

Description:
Crispy pieces of chicken with bell peppers, onions and green chilli in a dry soy sauce.
Ingredients:
- 12oz boneless chicken, cut into 1-inch pieces
- 1x large-sized white onions, thickly diced
- 2x medium-sized green bell peppers, thickly diced
- 2x medium-sized red bell pepper, thickly diced
- 1oz finely chopped ginger
- 2oz finely chopped garlic
- 3 tbs. all purpose flour
- 2 tbs. potato starch
- 1tbs. vinegar
- 1tbs. dark soy sauce
- Vegetable oil for frying
- 1 tsp. vegetable oil
- Salt - to taste (be careful as the soy sauce is salty too)
- 2x medium chopped thai green chilli – or to taste
- Chopped spring onion for garnish
Instructions:
- Mix all purpose flour, potato starch, chicken pieces and a pinch of salt until well coated
- Heat vegetable oil to 300F and deep fry the chicken for approx. 4 minutes, until it's cooked and crispy
- Heat 1 tbs. of oil in a separate pan on medium heat, add ginger, garlic and green chilli and sauté until golden brown
- Now add the onion, peppers, soy sauce, vinegar and salt (to taste), then cook until slightly tender
- Add chicken and mix well
- Once combined, garnish with spring onion
